3 Ingredient Breakfasts

Breakfast has always been my favorite meal of the day and it’s definitely the most important. Not only does it give you energy to start the day, it’s linked to many health benefits. Weight control, improved concentration, and lower cholesterol levels are just a few benefits from eating a balanced breakfast. I try to eat a healthy breakfast each morning, but with limited time, it’s difficult. I know many of you share the same struggle, so I wanted to post a few of my favorite  “go to” meals that are quick, easy, and ready in a snap. The best part? Each recipe contains only 3 ingredients.

Berry Yogurt Parfait

Berry Granola Parfait:
Vanilla Almond Granola (I used Nature’s Path, Flax Plus Granola)
Nonfat Greek Yogurt (I used Chobani)
Berries (your favorite, or mix them)

Layer the granola, yogurt, and berries. That’s it. I make variations of these all the time. I also like making them a day or two in advance. It’s easy to control the portion as well; often times I’ll only use half of the yogurt and make two smaller parfaits.

Avocado Egg Toast

Avocado Egg Toast:
Toasted Bread (I used Ezekiel Bread)
1 Egg (prepared to your preference)
1/4 Avocado

Prepare your egg, toast the bread, and chop the avocado. I usually add a dash of pepper after layering everything. This is definitely one of my favorite easy breakfasts.

Blueberry Banana Smoothie:
1 Ripe Banana (I usually have a bunch in the freezer; I prefer frozen, but it works either way)
1 cup Frozen Blueberries
1 cup Nonfat Plain Yogurt

Add ingredients to a blender and mix well. I frequently make smoothies and juices because they’re fast, but also because they travel well. One appliance I couldn’t live without- my Cuisinart Compact-Smoothie Blender. It comes with a variety of travel lids and containers, super convenient.

Hopefully this helped to inspire new breakfast ideas or bring back some old forgotten favorites. Although I mostly prepare quick meals and try to keep them pretty healthy, you guys know I’ve got a serious spot for sweets. Every once in awhile, it’s nice to indulge.
