South Side : The Gin Mojito

South Side Cocktail Gin is definitely my go-to liquor of choice. Whether it’s tonics, mixed with a splash of grapefruit juice, or shaken into a cocktail… I’ve got a thing for gin. So why did I wait SO long to try a south side?! Stupidity, I suppose. Ha! I’m declaring this my official summer cocktail. 

It’s refreshing and light, but a little sweet- the gin definitely pulls the flavor profile together. Did I mention, the simple syrup used in this recipe is made with agave and is infused with lavender? You guys should save this or pin it, because it’s so good and has quickly become one of my favorites! Here’s what you’ll need…

South Side Cocktail Ingredients For the Cocktail (serves two):
4 mint leaves, plus a couple more for garnish
1 ounce lavender infused simple syrup
2 ounces gin
1 ounce fresh lemon juice
club sofa, for serving
lavender sprigs, for garnish

For the Lavender Infused Simple Syrup:
1 cup agave nectar
1 cup hot water
3 sprigs of lavender

South Side Cocktail Recipe Step 1 // Begin by making the simple syrup. Fill a small pot with one cup of water and drop in the lavender sprigs, bring to a boil. Remove from heat and discard the lavender. Stir in agave nectar, making sure it’s fully combined. You’ll have plenty extra- it keeps well in an air tight bottle!

Agave Simple Syrup Infused with Lavender Step 2 // Now for the cocktail… Prepare your glasses by dropping in a molded ice cube.

South Side Cocktail Recipe Step 3 // Muddle the mint leaves with simple syrup in a cocktail shaker.

South Side Cocktail Recipe Step 4 // Add the gin and lemon juice, then fill the shaker with ice. Shake until the outside is frosted. Strain into the prepared glasses and top them off with a splash of club soda, a mint leaf, and a lavender sprig.

South Side Summer Cocktail That’s it! They’re really simple to make (maybe a little too simple), especially if you’ve already prepared the simple syrup in advance. Not only do they taste amazing, they look pretty beautiful, too!
