Prepare your favorite flatbread. I used premade pizza dough, rolling it thin, brushing it with olive oil, sprinkling with rosemary, then transferring to a hot oven until crispy. Another option? Feel free to purchase premade... just brush it with oil, sprinkle the rosemary, and broil it for 2-3 minutes. Allow it to cool completely before slicing into triangles, then set aside.
Drizzle a little olive oil into a skillet over medium / high heat. Add the thinly sliced onions, continually stirring until they're soft, translucent, and carmelized (add more oil if they begin to stick). Once finished, set aside.
Preheat your oven to 400 degrees. Prepare three (or more depending on the size) ramekins by drizzling a tiny bit of olive oil and balsamic vinegar into the bottom of each.
In a small bowl, mix the softened goat cheese with the chives and parsley, using a fork, then set aside.
Next, divide the roasted red peppers into the ramekins, followed by the goat cheese mixture, and the prepared onions. Top with minced rosemary, salt, and pepper. Bake for 12-15 minutes, or until the cheese is bubbly and begins to brown & melt.
Pull the ramekins from the oven, divide the flatbread triangles amongst them, drizzle with balsamic galze, and serve hot!
